This is damn special starter. All you need is our handcrafted halloumi, a few more ingredients and the balls to pull it off.

Bring this one to the table as a starter with a glass of crΓ©mant and the bar is set pretty high for the following plates. This recipe is a challenge you should accept!

All you need is a handcrafted Halloumi, oysters, a fatty cream, milk, butter, chives, salmon caviar. This recipe needs some prep-time so make sure you can start 13h before the actual cooking. The first thing you have to do is cut the halloumi in pieces but save a bit for later. Put the Halloumi chunks in the blender with the milk until the mix becomes a fine paste. Put it in the fridge and let it sit for 12h.
After the 12h, you mix the Halloumi paste with the fatty cream and some butter. The proportion of cream and milk should be 40/60. Now heat the mix but don't let it cook while stirring it constantly. Once you're done with that, let the hot mix run through a passing cloth. Let the filtered mix cool down and then beat and froth it between 50 and 60Β° until it becomes a nice fluffy foam. Take the Halloumi you kept and chop it up with the chives to make some nice Halloumi crumbles.
Now take your plate, put some Halloumi crumbles on it, sit a freshly cracked oyster on top of that, place some Halloumi foam on the oyster, and use some salmon caviar to give it some orange sparkle. Here you - the crazy delicious Cheese Gang starter is done!
